PERFORMANCE CRITERIA
Cayenne® Model 1001 Warmers are designed to hold heated
prepared foods at temperatures above the HACCP “danger
zone” of 140° F (60° C). The performance standard is
measured using the NSF mixture preheated to 165°F
(73.9° C). The unit will hold the temperature of this product
above 150° F (65.6°C). The temperature will be maintained
best when the food product is held using pans with covers, the
proper water level is maintained in the well, and the food

Vollrath 72020 Single Pan Food Rethermalizer – 1000 Watts
Cayenne® Full-Size Heat ’N Serve Rethermalizers provide
rethermalization in 1000 watts allowing two units to be plugged into a
20 amp service. 40 percent greater water capacity saves time and
effort in refilling the well. Model HS Ultra is a 1440 watt rethermalizer
which offers quicker preheat and more rapid rethermalization.
The Cayenne® Full-Size Heat ’N Serve Rethermalizers are designed to
take a container of cooked food from a chilled state (below 40.0° F
[4.° C]) through the HACCP “danger zone” of 165 F (73.9° C) in less
than 90 minutes. The performance standard is measured using the
NSF mixture chilled to 35° F (1.7° C). The electric unit will raise the
temperature of this product above 165° F (73.9° C) in less than 90
minutes. The temperature will be maintained above 150° F (65.6° C)
when the food product and pan or inset are used with a standard pan
or inset cover, the proper water level is maintained in the well, and the

NEMCO countertop warme rs shall be constructed with 300 series stainless steel wells and 400 series stainless
steel cabinets. They shall have tubular heating elements attached to an aluminum heat dissipating plate. All
models shall have an adjustable (up to 212º F) conductio n thermostat and a pilot light that cycles with the
operat ion of the heating element. 120V models shall have a cord and NEMA 5-15P plug while the 220V
model shall have a cord and CEE 7-7 plug. Models 6055A, 6055A-CW, and 6055A-43 shall be cETLus

from 100-212ºF. Tubular heating elements shall be used in these units. They come with a 6’ cord and NEMA
5-15P plug and shall operate on 120 volts. The Mini Steam Tables shall carry the approval of ETL Testing
